This recipe was a staple in my house as a child and as a wife. It is a great comfort food. You can cook this in the crock pot and add the bacon and cheese at the end. Personally I like to cook the ground beef first and then bake in the oven for 1-1/2 hour or until the rice is done. If I am using brown rice I also leave in the liquid from the can of corn. I always add the bacon and cheese last. We really don't care for the cheese on it. but that is just personal preference. I hope you will try this and enjoy it.

Ingredients For seven layer casserole with ground beef

  • 1 c
    uncooked white or brown rice
  • 1 can
    whole kernel corn
  • dash
    salt and pepper
  • 1 can
    (8 ounces) tomato sauce and 1/2 cup water
  • 1/2 c
    chopped onion
  • 1/2 c
    chopped green bell pepper
  • 1 lb
    extra lean ground beef, browned
  • dash
    salt and pepper
  • 1 clove
    garlic
  • 4
    stips bacon, cut in half
  • 1 c
    shredded cheddar cheese or cheddar jack blend
  • 1 can
    tomatoes, canned italian-style and diced

How To Make seven layer casserole with ground beef

    Layer the ingredients in a buttered 1 1/2- to 2-quart casserole in the order given. Cover and bake at 350° for 1 hour. Uncover and cook 30 minutes longer, until bacon is crisp. Top the casserole with the shredded cheese the last 10 to 15 minutes. Seven layer casserole serves 4.
