My Mom was famous for her meatloaf. Everyone loved it and raved about it. She died of breast cancer in 2000. After she passed I located her personal cookbook filled with hand written recipes she kept, but I couldn't find any written recipe recipe for her meatloaf. My Mom was Swedish and grew up in MN with many Scandinavian recipes. She was also a baker and a wizard with creams, sauces and gravys. I am still searching for the perfect replica of her recipe. Ingredients For mushroom meatloaf
- MEATLOAF

2 lbground beef
-
1 mdonion - chopped fine
-
2eggs - lightly beaten
-
1 csoda crackers - crushed
-
1 cancream of mushroom soup
-
1 tspsalt
-
1/2 tsppepper
- GRAVY
-
1/2 cmeatloaf drippings
-
1 pkggravy mix - brown, beef or mushroom

1 cancream of mushroom soup

1/2 cwater
How To Make mushroom meatloaf

1Pre heat oven 350 degrees

2In a large bowl combine all 10 meatloaf ingredients. Mix just until all ingredients are incorporated.

3In a baking pan shape mix into loaf shape.

4Bake for 1 hour. Let rest while making gravy.

5Save 1/2 cup of drippings.

6In a sauce pan mix dippings, mushroom soup gravy mix and water.

7Bring to a boil, stirring until it thickens.

8Pour over meatloaf or serve in a gravy boat on the side.

9Serve with mashed potatoes, pasta or rice.
