My Mom was famous for her meatloaf. Everyone loved it and raved about it. She died of breast cancer in 2000. After she passed I located her personal cookbook filled with hand written recipes she kept, but I couldn't find any written recipe recipe for her meatloaf. My Mom was Swedish and grew up in MN with many Scandinavian recipes. She was also a baker and a wizard with creams, sauces and gravys. I am still searching for the perfect replica of her recipe. Ingredients For mushroom meatloaf

  • MEATLOAF
  • 2 lb
    ground beef
  • 1 md
    onion - chopped fine
  • 2
    eggs - lightly beaten
  • 1 c
    soda crackers - crushed
  • 1 can
    cream of mushroom soup
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • GRAVY
  • 1/2 c
    meatloaf drippings
  • 1 pkg
    gravy mix - brown, beef or mushroom
  • 1 can
    cream of mushroom soup
  • 1/2 c
    water

How To Make mushroom meatloaf

    Pre heat oven 350 degrees

    In a large bowl combine all 10 meatloaf ingredients. Mix just until all ingredients are incorporated.

    In a baking pan shape mix into loaf shape.

    Bake for 1 hour. Let rest while making gravy.

    Save 1/2 cup of drippings.

    In a sauce pan mix dippings, mushroom soup gravy mix and water.

    Bring to a boil, stirring until it thickens.

    Pour over meatloaf or serve in a gravy boat on the side.

    Serve with mashed potatoes, pasta or rice.
