2 Tbspolive oil

"just a pinch" of pepper

1 Tbspbutter

1 Tbspheavy cream

3/4 cveal stock

1/2 cwhite wine, dry

1 cspinach, fresh

1/2 cshallots, chopped

1 cshiitake mushrooms, sliced

1/2 lbbeef tenderloin trimmings, in 1" cubes

How To Make sauteed beef tips with shiitakes

1Heat the oil in a large skillet.

2Season the beef with salt and pepper, then sear it in the hot oil, making sure to brown it on all sides.

3Add the mushrooms and shallots, toss, and continue to cook for 2 minutes.

4Add the wine and reduce 1 minute.

5Add the spinach and stock, reduce for 2 minutes.

6Add cream, butter, and season with salt and pepper.

7Garnish with parsley.
