    butter
  • 1 Tbsp
    heavy cream
  • 3/4 c
    veal stock
  • 1/2 c
    white wine, dry
  • 1 c
    spinach, fresh
  • 1/2 c
    shallots, chopped
  • 1 c
    shiitake mushrooms, sliced
  • 1/2 lb
    beef tenderloin trimmings, in 1" cubes
  • parsley

    Heat the oil in a large skillet.

    Season the beef with salt and pepper, then sear it in the hot oil, making sure to brown it on all sides.
