Mixing smoked sausage with a fajita recipe ended up being a great last-minute dinner idea. The flavor was really intense. The dish was all gone in no time.

We love fajitas and smoked sausage, so combining them into one sandwich is a big win for us. The savory sausage with the sweet caramelized onions and bell peppers coated in fajita seasonings is a wonderful bite.

Ingredients For sausage, onion and pepper fajita sandwich

  • 1/4 c
    olive oil
  • 3 sm
    yellow onions
  • 1 md
    green bell pepper
  • 1 md
    red, yellow or orange bell pepper
  • 12 - 18 oz
    smoked sausage (2 or 3 links)
  • 4 stalk
    chives
  • 1/3 c
    water, plus more if needed
  • 1 pkg
    fajita seasoning
  • 1
    handful fresh spinach
  • 2 Tbsp
    flour or corn starch
  • 4
    long individual bread rolls or buns

How To Make sausage, onion and pepper fajita sandwich

  • Heat olive oil.

    Heat olive oil in pan.
  • Slice onions and peppers. Saute until tender.

    Slice up onions and peppers into thin strips. Add to pan and saute until tender. Stir every few minutes.
  • Add sliced smoked sausage.

    Slice sausage into smaller pieces about 3 or 4 inches long. If the sausage is sliced julienne style, it is easier to eat out of the bun later. Add to saute pan.
  • Chop chives and add to the pan.

  • Add water and fajita seasoning.

    Add water and fajita seasoning to the pan. Stir well. Cover and let simmer for 5 minutes.
  • Add chopped spinach and corn starch to thicken the sauce.

    Chop spinach and add to the pan. At this point, you will see if you need more water. It is good to have water simmering at the bottom of the pan. Add more water if needed. Then add the corn starch or flour. Mix well to form a thick sauce. Add more water/flour/corn starch, if needed. Put the cover back on and simmer for 5 more minutes.
  • Warm rolls on the top of the skillet.

    I like to arrange my bread rolls on top of the pan cover to warm them up that way. After the last 5 minutes simmer, the dish is done. Let sit for a few minutes and serve on warm bread.
