Ingredients For santa fe soup

  • 2 lb
    ground buffalo,or ground turkey,or ground chuck.
  • 1 lg
    onion
  • 2 pkg
    ranch style dressing mix
  • 2 pkg
    taco seasoning mix
  • 1 can
    each black beans,kidney,and pinto beans.
  • 2 can
    rotel diced tomatoes and chilies,chunky
  • 6 slice
    bacon
  • 1 lg
    can stewed tomatos
  • 1 can
    white corn.
  • 2 can
    beef broth, reduced sodium
  • 16 oz
    baby portebello mushrooms sliced

How To Make santa fe soup

  • 1
    in a large dutch oven,(i use a cast iron dutch oven when camping).cook bacon till almost crisp. remove with sloted spoon,reserve. in bacon drippings add onions,and mushrooms,cook till onion is soft. remove and reserve. add turkey,or beef or buffalo. cook till no longer pink. drain any fat. add onions,bacon,and mushrooms.

    add taco seasoning,and ranch dressing stir to mix well. add remaning ingredients ,add beef broth. Simmer for 2-2,1/2 hours. serve with tortilla chips,garnish with sour cream,cheese,and chopped gree oinons.
