I am following in my mom's great tradition of mixing things up when it comes to meatloaf. I have actually made this (or variations of it) a number of times and it's always a hit. Don't worry about it being a little loose - the rice will absorb flavors as it cooks.

Ingredients For salsa meatloaf

2 lbground beef
-
1egg
-
1 pkgonion soup mix
-
1/2 cwater

1 crice, cooked, cooled

1 csalsa
-
1/2 ccheddar cheese, shredded (optional)

1/2 cchili sauce
-
1/4 cbrown sugar
-
1-2 dashworcestershire sauce
How To Make salsa meatloaf

1Preheat oven to 350. Mix all ingredients together except for chili sauce, brown sugar and worcestershire.

2Form into loaf and put in loaf pan, baking pan or cookie sheet lined with foil.

3Mix chili sauce, brown sugar and worcestershire together and spread over meatloaf.

4Bake for about 1 1/2 hours or until well done. Let sit for about 10-15 minutes to make slicing easier.
