Ingredients For rusty's stuffed peppers

  • 6 lg
    green peppers, cleaned and parboiled for 5 minutes
  • STUFFING
  • 1/2 c
    onions, chopped
  • 1/2 lb
    ground chuck
  • 2 Tbsp
    "fat" - olive or canola oil would be fine
  • 5 Tbsp
    uncooked rice
  • 1 c
    water
  • SAUCE
  • 1 can
    tomato soup
  • 1 1/2 tsp
    sugar
  • 3/4 tsp
    salt
  • 1/8 tsp
    freshly ground black pepper

How To Make rusty's stuffed peppers

  • 1
    Saute the onions in fat until tender. Cook the rice in the water until it is fluffy and the water has been absorbed. Combine the onions, rice, and ground chuck and mix well. Stuff the peppers.

    Make the sauce by combining all the ingredients in a saucepan. Cook for 10 minutes.

    Place the peppers in a baking dish, pour the sauce over top and bake for about 1 hour at 350 degrees F until the peppers are tender.
