Ropa Vieja is comforting Cuban cuisine. Cathy's recipe is easy to prepare because the Crock Pot does all the work. The beef turns out extremely tender. Tomatoes and bell peppers add a sweetness while the array of spices add a bit of smokiness to the recipe. This is a wonderful meal that can be prepped in no time. Serve with black beans and brown rice and let your taste buds travel to Cuba.

Slow Cooker Crock Pot
Ingredients For ropa vieja crock pot recipe

2 lbbeef chuck (flank steak, london broil or skirt steak) thinly sliced

1large onion (sliced)

1green bell pepper (sliced)
-
1red or yellow bell pepper (sliced)

3roma tomatoes (cut into strips)
-
1jalapeno (optional if you would like a little heat) chopped
-
10garlic cloves (minced)
-
1/2 ccilantro (coarsely chopped)
-
2 cchicken or beef broth
-
1/2 cdry white wine
-
1 Tbspred wine vinegar
-
1-2bay leaves
-
1 cancrushed tomatoes, 16 oz
-
1 cantomato paste, 6 oz
-
1small jar of red roasted pepper strips
-
2 tspdried oregano
-
2 tspcumin
-
1packet of Sazon (found in the international aisle)

1 tspsmoked paprika
-
1 tspadobo (optional) found in the international aisle

1/2 colives (rinsed, drained and cut in half)

2 tspsalt

1lime (cut into wedges to sprinkle over ropa vieja once cooked)
How To Make ropa vieja crock pot recipe

1Cut meat into thin strips. Season with salt and adobo if using. Can brown meat in a heavy skillet with a few tablespoons of oil if you would like. I normally just add most of the ingredients together to slow cooker.

2Add all ingredients to slow cooker on high for 4 hours or set to low for 6 hours except cilantro and olives.

3After 4 hours stir in cilantro and olives.

4Serve with white rice. Traditionally also served with stewed black beans.
