I enjoy slow cooked beef roasts, but I get tired of the typical roast with potatoes and carrots. I have been looking for a recipe that would be great tasting, yet not typical. After much scouring through recipe books and recipes here on JAP, I could not find what my taste buds were longing for. So I decided to create my own roast beef dish. Of course without potatoes or carrots I did need a side to accompany my roast. I decided to use some of the broth from the slow cooker after the roast was cooked to prepare a rice dish. For those of you who want potatoes and carrots,these can be added. However, you will not have enough broth to also prepare the rice.

1 - 1 1/2 lbbeef roast

1 to 1 1/2 tspmrs. dash grilling blend for steak

1 lgonion, sliced

2 Tbspworcestershire sauce

1 cbrewed coffee, cold

1/2 ckentucky bourbon

1Season roast with seasoning and set aside for a short while.

2Slice onion and place in bottom of slow cooker. Place seasoned roast on top of onions.

3Mix together Worcestershire sauce, coffee, and bourbon. Pour over roast. Cook on high for 4 hours. Serve the roast with some of the broth on the side for dipping, if desired.

4NOTE: If you wish to prepare rice as an accompaniment; when roast is finished cooking, remove 1 cup of the broth (there will still be plenty left for dipping). Prepare brown Minute Rice (serving for 2) according to package directions using the broth in place of the water and adding a can of salt-free diced tomatoes with garlic and onion (drained). ENJOY!
