bought 1 1/2 bussels of peppers was gettin tired of choppin them so decided to come up with recipe for red stuffed pepper instead of green one this is what i came up with hope ya like it

Ingredients For red stuffed bell pepper!!!

  • 2 md
    red bell peppers,top removed and seeds and viens removed...keep top
  • 2/3 lb
    ground chuck
  • 1 sm
    red onion,chopped fine
  • 1 can
    mushroom soup,undiluted,divided
  • 1/2 lb
    button mushroom,chopped fine
  • 1/2 c
    instant rice
  • 1 c
    + 2t sharp cheese
  • 1/2 stick
    margarine
  • 1 tsp
    jarred minced garlic
  • 2 Tbsp
    fresh parsley,chopped
  • fresh ground black pepper,to taste...please no salt added is alot in the soup

How To Make red stuffed bell pepper!!!

    pre heat oven to 375 place red pepper in oven proof dish

    in med size fry pan add margarine heat til it melts add onion cook til it starts to brown then add mushrooms and garlic cook til mushrooms cooked turn off and cool several min

    take 2 bowls one small one med size in small bowl put 3T mushroom soup[put the rest in larger bowl]2t cheese,parsley mix well

    in other bowl add beef,rice,cheese,and cooled mushrooms mix well add pepper as needed

    now fill red peppers with meat mixture spoon soup mixture on top bake 40-45 min til red pepper is tender

    great served with small baked tater and green beans
