I just couldn't do meat and sauce so this is my version of Sloppy Joe's. It is always a big hit with whoever I make it for. I always hear "I've never had sloppy joe's like this before.

1 1/4 lbground beef (95% lean)

1 mdyellow onion- diced

1 lggreen bell pepper- diced

1 lbcrimini mushrooms –sliced

5 stickcelery- sliced across 3/8”

1 mdpasilla pepper- diced

3bay leaves (fresh if available)

15oz canyellow corn
-
15oz candiced tomato
-
15oz canstewed tomato
-
15oz cantomato sauce
-
3/4 cdark brown sugar
-
4 clovegarlic-minced
-
1 Tbspdried oregano
-
2 Tbspsmoked paprika
-
2 Tbspdried basil
-
1 tspblack pepper coarse grind

1 tspkosher flake salt
-
6-8onion rolls
-
4 Tbspolive oil

2 Tbspcorn starch
-
pickled jalapeno slices (optional)
How To Make really sloppy joes-open faced

1Brown beef in olive oil
-
2Add remaining ingredients except for jalapeno, and corn starch

3Cook 1 hour at simmer

4Thicken to desired consistency as this is really a very wet sloppy joe with 2 tablespoons of corn starch and 2 tablespoons of water mixed into a slurry.

5Sprinkle with Jalapeno Slices to taste
