Ingredients For quick hamgurger and potato casserole

  • 2 2/3 c
    instant mashed potatoes
  • 1 1/2 c
    sour cream
  • 1 c
    water
  • 1 lb
    lean ground beef
  • 3 Tbsp
    chopped onion or 1 t. dried minced onion
  • 1 can
    (15oz) tomato sauce
  • 1 can
    (12oz) mexican corn (undrained)in any veggie aisle
  • 1 tsp
    salt
  • 1/4-1/2 tsp
    pepper
  • 1/8 tsp
    oregano
  • 1/2 c
    diced american or chedder cheese.(more if you like)

How To Make quick hamgurger and potato casserole

    In a ungreased 9"x13" baking dish,blend potato flakes with sour cream and 1/2 cup of water. (mixture should be crumbly) If not add more potato flakes.

    Pat firmly into bottom of pan. Brown beef(with onions,if using). Add dried onion(if not using fresh),remaining1/2 cup water,tomato sauce,corn,salt,pepper and oregano.

    Spoon beef mixture over potatoes. Sprinkle with cheese. Bake 350 for 25-30 minutes.
