I made this with my own cooked and frozen meatballs. You can buy frozen meatballs or make them fresh as you prefer.

Ingredients For quick easy & meatball pasta bake

  • 2 c
    penne, cooked - 1 cup pasta water reserved
  • 2 tsp
    olive oil
  • 1 md
    onion, diced
  • 4 c
    lightly packed baby greens of you choice
  • 1 c
    tomato sauce
  • 1/2 c
    light ricotta cheese
  • 16
    italian meatballs (just use italian seasoning to taste when making the balls)
  • 1/2 c
    shredded mozzarella cheese
  • 2 Tbsp
    fresh basil (optional)

How To Make quick easy & meatball pasta bake

    Preheat oven to 375°F (190°C). In a large non-stick skillet, heat oil over medium-high heat and cook onion until tender, about 5 min. Stir in the greens, remove from heat and keep covered until they are wilted, about 2 min.

    Uncover and let cool completely. Stir in cooked pasta, reserved pasta water, tomato sauce, and ricotta. Transfer to an 8 x 8-in baking dish. Place meatballs evenly in the pasta mixture. Top with mozzarella.

    Bake covered with foil 20 min. Uncover and bake for an additional 10 min., or until cheese is melted and bubbling. To serve, garnish with fresh basil (if using).
