I enjoy food. And when you have an opportunity to make it your own, why not? This is a recipe I had but I changed it up to where it was better.

Ingredients For quesadilla casserole

2 tspchili powder

1 tspground cumin

1 tspminced garlic

1/2 tsporegano, dried

1/2 tspcrushed red pepper (optional)

1 lbground beef
-
1/2 cchopped onion
-
1 can14.5 oz peeled tomatoes diced (undrained)

1 can4 oz diced green chiles (undrained)

1 can16 oz refried beans
-
1 cwhole kernel corn
-
6flour tortillas (8 in)

2 cshredded cheddar cheese
-
sour cream for garnish
How To Make quesadilla casserole

1Brown beef and onions in large skillet on Med-high heat; drain. Add tomatoes, corn, and chiles; mix well. Stir in all of the spices except Red Pepper. Bring to boil. Reduce heat to low; simmer 10 minutes till all the liquid is gone. Add Red pepper to taste, if desired.

2Spread 1/2 cup of the beef mixture on bottom of 13x9x2 in. baking dish sprayed with no-stick cooking spray. Take 3 tortillas, spread refried beans on each and overlapping, lay over the beef mixture. Layer with 1/2 of the remaining beef and 1/2 the cheese. Repeat with remaining tortillas, beef mixture and cheese.

3Bake in preheated 350°f oven 15 minutes or until heated through. Let stand 5 minutes before serving. Top each serving with a dollop of sour cream.
