My husband LOVES veal but only if it's tender. I've combined various recipes I've come across for this one. If you can pick up a breast of veal, you can cut it into larger sized pieces for a more substantial meal. You can easily increase the batch by adding more tomatoes. Serve over spaghetti, your favorite pasta or rice. I always make a large batch so that there's extra for the freezer.

Pressure Cooker/Instant Pot
Ingredients For pressure cooker veal sauce

2 1/2 lbveal breast or stew meat, cut into chunks

1 cflour
-
6 clovegarlic, minced or to taste

1onion, diced
-
2 candiced tomatoes, 28 oz
-
1 Tbsptomato paste
-
3/4 cwhite wine
-
1 1/2 cchicken broth
-
1/2 tspthyme
-
1 tspsalt
-
1/2 tsppepper
-
2bay leaves
-
1 tspred pepper flakes or to taste, optional
How To Make pressure cooker veal sauce

1Cut veal into chunks and dredge in flour.

2Heat oil in pressure cooker. Brown veal and set aside.

3In same oil, sauté onions and garlic until lightly browned but not burned.

4Return veal to the pot and add the rest of the rest of the ingredients.

5Seal cooker and bring to full pressure. Cook for 15 minutes. Remove from heat and allow pressure to return to normal naturally.

6Remove bay leaves before serving.
