These meatballs are a wonderful change from the traditional beef or pork variety, and they have just enough spice to let them stand up to a good cream, or tomato sauce. So, you ready… Let’s get into the kitchen.

  • PLAN/PURCHASE
  • 1 lb
    ground chicken, i prefer thighs
  • DRY INGREDIENTS
  • 3/4 c
    breadcrumbs, not panko, just regulars breadcrumbs
  • 1/4 c
    parmesan romano cheese, freshly grated
  • 1 Tbsp
    dried parsley flakes
  • 1 tsp
    dehydrated onions, crushed
  • 1 tsp
    lemon/pepper spice
  • 1/4 tsp
    garlic, powder
  • 1/4 tsp
    cayenne pepper
  • salt, kosher variety, to taste
  • white pepper, freshly ground, to taste
  • WET INGREDIENTS
  • 2 lg
    eggs, beaten
  • 1 Tbsp
    olive oil, extra virgin

How To Make poultry essentials: spicy chicken meatballs

    I am using a ice cream scoop, and it produces a meatball of 1.25 ounces (35g). You can, of course make them any size you desire. If you make them bigger, or smaller, you will have to adjust the baking time.

    Gather your ingredients (mise en place).

    Place a rack in the lower position, and preheat the oven to 350f (175c).
  • 5
    Add all of the dry ingredients into a bowl, and mix to combine.

    Whisk together the eggs, and the olive, oil, and then add them to the dry ingredients; along with the ground chicken.

    Gently mix together the ingredients, until combined.

    Create meatballs, of about 1.25 ounces each.

    Place onto a parchment-lined baking sheet. This will give you about 18 chicken meatballs

    Place in the preheated oven, and baked until cooked through, about 30 – 35 minutes.
