I use to make this often when the children were young and now I have International students I have started making it again. It looks so pretty when you cut it. I like it with Broccoli and sliced Carrots

Ingredients For potato iced meatloaf

  • 2 lb
    hamburger
  • 1 lg
    onion
  • 1 c
    soft bread crumbs
  • 2 lg
    egg
  • 1 pkg
    stove top stuffing
  • 4 lg
    potatoes
  • 1/4 c
    milk
  • 2 clove
    garlic
  • 1 Tbsp
    butter

How To Make potato iced meatloaf

    Mix hamburger;onion;bread crumbs;1 of the eggs and the stove top stuffing together, Put this in a loaf pan and cook bake at 350 for about 1 and 1/2 hours

    While the meatloaf is cooking peel the potatoes and cook with the garlic cloves until done.Drain well and whip with the milk;egg; and butter.

    Remove meatloaf from oven and turn out on a oven proof pan.Ice with the potato mixture and brush with melted butter.Return to oven till golden brown. Slice and serve with Vegetables of your choice
