I made these often as a yong bride and again a couple years ago and they are on Santa's favorites list Since these do not have to be browned they are pretty fast.

Ingredients For porcupine meatballs

  • 1 lb
    ground beef
  • 1 lg
    egg
  • 1 can
    (10 3/4 oz size) tomato soup
  • 1/4 c
    uncooked rice
  • 2 Tbsp
    finely chopped onion
  • 1 Tbsp
    snipped parsley
  • 1/2 tsp
    salt
  • dash
    pepper
  • 1 tsp
    worchestershire sauce

How To Make porcupine meatballs

  • 1
    combine egg, 1/4 cup of the tomato soup, and next five ingredients Add beef and mix well. Make 20 small meatballs and place in sprayed skillet. Mix remaining soup, 1/2 c water andworchestershire. Pour over meatballs bring to boil, reduce heat,cover and simmmer 40 min stirring occasionally, so they don't stick to pan
