I KNOW THIS SOUNDS AWFUL, BUT IT IS JUST MADE WITH HAMBURGER WITH RICE IN IT, MY MOM USED TO MAKE THIS IN THE PRESSURE COOKER AND THAT WOULD MAKE THE RICE STICK OUT OF THE HAMBURGER SO SHE CALLED IT PORCUPINE MEATBALLS.

Ingredients For porcupine meatballs

  • 3 lb
    hamburger
  • 2
    eggs
  • 2 c
    minute rice uncooked
  • salt pepper and garlic to your taste
  • 1 pt
    whipping cream
  • 1 lg
    family size tomato soup

How To Make porcupine meatballs

    MIX HAMBURGER, SALT, PEPPER, GARLIC AND EGGS, ADD THE DRY RICE, MAKE INTO MEATBALLS, ANY SIZE YOU WANT. ADD THEM TO THE ROASTER PAN WITH THE TOMATO SOUP IN THE BOTTOM

    BAKE AT 350 FOR ABOUT 1 HOUR, WHEN YOU BRING THEM OUT, ADD THE PINT OF WHIPPING CREAM AND STIR, MAKES A WONDERFUL GRAVY FOR MASHED POTATOES
