Ingredients For pico island pot roast with allspice

  • 4 lb
    boneless chuck roast
  • 1 lg
    onion, peeled and thinly sliced
  • 1/2 c
    butter, softened
  • 1/4 c
    wine vinegar
  • 1/4 c
    water
  • 2 clove
    garlic, mashed
  • 1 1/2 tsp
    paprika
  • 1 tsp
    coarse salt
  • 4
    whole allspice berries
  • 1 sm
    chili pepper
  • 1
    2-inch piece cinnamon stick
  • white wine, as needed

How To Make pico island pot roast with allspice

    Preheat oven to 350F. Place the roast in a large Dutch oven.

    Add remaining ingredients, except white wine, to the pot. Turn roast to coat. Pour in enough wine to come three-fourths of the way up the sides of the roast. Cover pan tightly.

    Place the pan in the oven for 1 hour. Reduce heat to 200F. and continue to roast for 3 hours.

    Serve, with juices, with buttered rice or potatoes.
