Ingredients For pico island pot roast with allspice

4 lbboneless chuck roast

1 lgonion, peeled and thinly sliced

1/2 cbutter, softened

1/4 cwine vinegar
-
1/4 cwater
-
2 clovegarlic, mashed

1 1/2 tsppaprika
-
1 tspcoarse salt
-
4whole allspice berries
-
1 smchili pepper
-
12-inch piece cinnamon stick

white wine, as needed
How To Make pico island pot roast with allspice

1Preheat oven to 350F. Place the roast in a large Dutch oven.

2Add remaining ingredients, except white wine, to the pot. Turn roast to coat. Pour in enough wine to come three-fourths of the way up the sides of the roast. Cover pan tightly.

3Place the pan in the oven for 1 hour. Reduce heat to 200F. and continue to roast for 3 hours.

4Serve, with juices, with buttered rice or potatoes.
