This recipe was given to me by my mother-in-law and it is always a hit! It, also, can be done in a crock pot.

Ingredients For oven beef stew

  • 2 lb
    beef, cut into cubes
  • 1 md
    onion, cut in eighths
  • 3
    stalks, sliced diagonally
  • 4 md
    carrots, pared, cut in halves, lengthwise & crosswise
  • 1 c
    tomato juice
  • 1/3 c
    quick-cooking tapioca
  • 1 Tbsp
    sugar
  • 2 tsp
    salt
  • 1/4 tsp
    pepper
  • 2 md
    potatoes-sliced 1/4" thick

How To Make oven beef stew

  • 1
    Combine beef, onion, celery, carrots, tomato juice, tapioca, sugar, salt and pepper in a 2 1/2 qt. casserole.

    Cover & bake at 325 degree oven for 3 1/2 hrs. or until meat is fork tender.

    Stir stew several times during cooking. If stew seems thick, stir in a little water.

    Mix potatoes into stew during last hour of cooking time!!!!
