This recipe was given to me by my mother-in-law and it is always a hit! It, also, can be done in a crock pot.

Ingredients For oven beef stew

2 lbbeef, cut into cubes
-
1 mdonion, cut in eighths
-
3stalks, sliced diagonally
-
4 mdcarrots, pared, cut in halves, lengthwise & crosswise

1 ctomato juice
-
1/3 cquick-cooking tapioca
-
1 Tbspsugar
-
2 tspsalt
-
1/4 tsppepper
-
2 mdpotatoes-sliced 1/4" thick
How To Make oven beef stew

1Combine beef, onion, celery, carrots, tomato juice, tapioca, sugar, salt and pepper in a 2 1/2 qt. casserole.

2Cover & bake at 325 degree oven for 3 1/2 hrs. or until meat is fork tender.

3Stir stew several times during cooking. If stew seems thick, stir in a little water.

4Mix potatoes into stew during last hour of cooking time!!!!
