This is the good ol' meat loaf I grew up with. I didn't think there was any other kind for years. I tweaked the recipe recently and substituted Panko bread crumbs for the oats and added a chopped green pepper. It's easy and it's GOOD! I believe my mother often served it with baked beans on the side. I prefer a side of macaroni and cheese.

1 1/2 lbground beef (i use chuck)

1 cpanko bread crumbs

1/4 cchopped onion

1 mdgreen pepper, chopped

1 1/2 tspsalt

1/4 tsppepper

1 ctomato juice

1egg, beaten

1In a large bowl, combine all the ingredients. Pack firmly into an ungreased loaf pan.

2Bake in a preheated 350-degree oven for 1 hour and 15 minutes. Pour off any grease.

3Let stand 5 minutes before slicing. I like mine with a little ketchup. Some like A-1, mustard, or even plain.
