This meatloaf is super yummy and moist. I use a square baking dish so that the meatloaf cooks more evenly and there are more “crusty” parts around the edges and on top. It’s great with mashed potatoes and gravy and a green salad for dinner or during the summer months, I make this early in the morning so I don’t have to heat up my kitchen during the hot of the day; then we have another option for sandwiches other than your basic lunch meats. So Yummy!!!

Ingredients For nicole's marvelous meatloaf

2 lbground beef
-
1 ccheez-it crackers (crushed) or garlic ritz for non-dairy

1 pkgonion soup mix (dry)

2 Tbspgarlic (minced) i used dried

1 tspblack pepper
-
1 Tbspno salt seasoning (i use they type you find at big lots or the dollar type stores)

1egg
-
1- 8 ozcan tomato sauce any flavor or v-8 juice

1 mdred onion (diced)

2 Tbspjalapeno mustard (i use morehouse brand)
How To Make nicole's marvelous meatloaf

1Preheat oven to 375º

2Thoroughly mix ALL ingredients in a bowl.

3Place in an 8” or 9" square baking dish.

4Cook for 60 minutes (or until internal temperature is 165º). I like mine super "crusty" so I leave it in up to 30 minutes more.

5Let meatloaf rest for 15 minutes before serving.
