Ingredients For new york strip steak with steak sauce hollandaise
- FOR THE HOLLANDAISE SAUCE

3/4 cbutter

1 Tbspeach soy sauce and worcestershire sauc

2egg yolks
-
1 Tbspeach sherry vinegar and water

1 tsplemon zest
- FOR THE STEAK

4new york strip steaks

2 Tbspoil
How To Make new york strip steak with steak sauce hollandaise

1To make the sauce In a small saucepan melt the butter with out stirring. Skim off the milky solids. Set aside and keep warm

2In a small bowl stir together the soy sauce and Worcestershire sauce and set aside.

3Place the egg yolks, water and vinegar in a metal bowl. Set the bowl over a pan with boiling water. Do not let the bowl touch the water. Whisk constantly until thickened scraping sides of bowl. Remove from heat. and continue to whisk slowly adding the butter. If it starts to break or look curdly stop adding butter and keep whisking until its smooth again. Then mix in the soy sauce mixture and lemon zest.

5For the steaks Add oil to pan. Season the steaks with salt and pepper and sear until desired doneness. Serve with sauce over top.
