I created this flavorful chili. Please don't let the long list of ingredients deter you from trying it. Most of the ingredients you probably already have in your pantry. I had a lot of canned beans and tomatoes and veggies in my fridge I needed to use, so that is how this chili got its name. Serve this easy chili at your next tailgate party, everyone will love it! My husband asked me to add a ghost pepper or two, they are completely optional, as it made this chili quite spicy. Family says it's awesome! Enjoy!

Slow Cooker Crock Pot
Ingredients For ~ my awesome tailgate pantry chili ~ crock pot

1/2each - red and green bell pepper, chopped

8 ozsweet or hot italian sausage - casings removed

2 mdonion, chopped
-
1carrot, chopped
-
2 stalkcelery, chopped
-
1 lblean ground beef
-
1 Tbspgarlic paste
-
4 ozsemi sweet chocolate chips
-
1 Tbspcocoa powder
-
1 cbeef broth
-
pinchcinnamon
-
1 - 15 ozcan of each - pinto beans, black beans and whole kernel corn - drained

1 - 15 ozcan - bush's chili beans in hot sauce
-
1 - 15 ozcan chopped tomatoes and juice
-
1 - 15 ozcan - diced tomatoes with basil, garlic and orefano

1 - 4 ozcan. green chiles
-
1 Tbspeach - chili powder & cumin
-
1 tsporegano, dried
-
1 1/4 tspsalt
-
1/2 Tbspred pepper flakes or to your liking

1dried ghost pepper - chopped - optional

1I diced all of my veggies in the food processor. Pulsed 6 - 8 times. You can chop by hand if prefer. In a large skillet, over medium heat - add the veggies and meat. Crumble meat as it cooks with a spatula. Stir often and when meat is no longer pink and veggies are tender.

2Add to a 6 quart slow cooker. To this add all remaining ingredients and stir. Turn pot on high and bring to a boil and continue cooking this way for 25 minutes. Turn down to low and cook another 2 hours or until desired thickness.

3Taste and adjust seasoning according to your preferences. I added a little more salt at the end.

4Serve with your favorite toppings. I used sharp cheddar cheese, green onions and sour cream. Serve with crackers or a nice crusty piece of bread.
