As a single mother, my mom would pinch pennies and "throw something together" for supper. One of our favorites was probably the easiest to make! This recipe is versitile. I make it now and serve over salad with corn chips for a family fave.

Ingredients For mom's poor man's grub

  • 4-6 md
    potatoes
  • 1-2 lb
    hamburger
  • 2-3 can
    light red kidney beans
  • 1 pkg
    lipton's onion soup mix
  • 1
    bag of salad mix

How To Make mom's poor man's grub

    Peel and dice potatoes and fry in shortening. Fry 1-2 pounds of hamburger; depending on how many people you are serving.

    Drain the hamburger, then add 2-3 cans of light red kidney beans, a pkg of lipton's onion soup mix and 2-3 cups of water. Simmer for 15 min- be careful it doesn't go dry.

    Serve the beans and hamburger over the potatoes for a quick and filling dinner.

    If you are on a diet, or just like to eat healthy... prepare the hamburger as above adding only half the onion soup mix and serve over a salad. My family loves it this way.
