mom's pepper steak

My Mom made this on weeknights she sometimes used a fresh Hatch green chili for heat or fresh Pablano pepper for sweetness, it's quick easy and sooo yummy! Great with a tossed salad and french bread. I lower salt by using reduced sodium broth or bouillon and season steaks with Mrs. Dash any flavor.

Ingredients For mom's pepper steak

2-3 lbtenderized round or chuck steak

1 mdonion
-
1 mdbell pepper
-
1 clovegarlic chopped fine
-
1 mdjar of chunk style picante
-
1/4 cplus 2 tbls flour
-
2 cbeef broth/bouillon
-
1 cmarsalla or crisp white wine(pinot grigio) or coke or pepsi
-
water, as needed
-
salt and pepper
-
mrs. dash any flavor
How To Make mom's pepper steak

1Cut steak into strips or portioned serving size, season and flour lightly

2Saute chopped onion and bell pepper in olive oil until tender and fragrant over medium heat

3Move vegies to edge of pan, drizzle more olive oil in pan, brown steak on both sides add 2 tablspoons flour and brown lightly

4Add 1 cup of wine or other liquid let reduce by 1/2, lower heat, add 2 cups beef broth or bouillon and enough water for steaks to sit in but not be covered completely. Cover, simmer on low heat for 20-30 mins. until steak is tender, add picante continue to simmer until hot. Serve over Buttered Rice or Mashed Potatoes!!
