I have been asked for this recipe several times. It always turns out great, and some people who really don't care for meatloaf have changed their mind after eating this meatloaf.

Ingredients For mom's meatloaf

  • 1 c
    tomato juice
  • 3/4 c
    oats, quick cooking
  • 1
    egg or egg white
  • 1/4 c
    chopped onions
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1/1/2 lb
    lean ground beef

How To Make mom's meatloaf

    Heat oven to 350* For Piquant sauce topping: In a small bowl mix together 1/4 cup ketsup, 1/4 cup brown sugar,a pinch of nutmeg. set it aside.

    In a large bowl combine all the ingredients, except for the ground beef; mix well. Add the ground beef and mix lightly but be sure to mix meat in evenly.

    Press mixture into a 8x4 inch loaf pan.Top with Piquant sauce topping, then Bake 1 hour. Let stand 5 minutes before cutting.
