This recipe caught my attention because it had cocoa and cinnamon as ingredients. This has turned out to be a family favorite. Definitely not your everyday meatloaf.

Ingredients For mimi's mexican meatloaf

1 1/2 lbmeatloaf meat mix(beef, pork and veal) or just all ground beef

1/4 cplain breadcrumbs, dried

1 lgegg, well beaten

1 csalsa, we use hot picante brand

4 1/2 ozchopped green chiles

2 Tbspbrown sugar, packed

1 Tbspchopped fresh cilantro

1 Tbspchopped parsley, or additional cilantro

1 tspcocoa powder
-
1/2 tspsalt
-
1/4 tspgarlic powder
-
1/4 tspcumin
-
1/4 tspcinnamon
-
1/4 tspchili powder
-
1 tsplemon juice
How To Make mimi's mexican meatloaf

1Preheat oven to 350. In a large bowl combine meat, eggs, bread crumbs and mix well.

2In a medium bowl, combine remaining ingredients and mix well. Add 3/4 cup of salsa mixture to meat mixture and mix well. Put meat mixture into an ungreased 1 1/2 to 2 quart casserole or 9 x 5 loaf pan. Shape mixture into a loaf shape.

3Bake at 350 for 50 minutes. Remove from oven and spoon remaining sauce over top of meatloaf. Return to oven and bake an additional 20-30 minutes or until thoroughly cooked and center reads 160 degrees on an instant-read thermometer.
