I think that microwaves first came out in the late 70's or early 80's. I was one of the lucky ones to get one back then. This was my favorite recipe from my cookbook that came with my new microwave. My family loved it and I've tweaked it thru out the years. Most of the tweaks are simple but include changing the original recipe by using cottage cheese for 1/2 of the ricotta which made it a little creamier, Italian seasoning which replaced all of the individual spices and adjusting the cooking times based on newer stronger microwaves. Ingredients For microwave lasagna

1 lbground beef
-
1 clovegarlic, minced
-
1 cwater
-
6 oztomato paste
-
14 oztomato sauce
-
1 1/2 tspitalian seasing
-
1/2 tspsalt
-
1/2 tspsugar
-
1/4 tsppepper
-
1/2 lbricotta cheese, part skim (you can use all ricotta and skip the cottage cheese if desired)

1/2 lbcottage cheese
-
1/2 cparmesan cheese, grated
-
1egg, beaten
-
2 Tbspparsley, chopped
-
1/2 lblasagna noodles, cooked
-
1/2 lbmozzarella cheese, shredded
-
parmesan cheese, grated
How To Make microwave lasagna

1Place beef and garlic in 2 quart casserole.

2Cook, covered on full power 4 to 5 1/2 minutes. Stir 1/2 way through time. Drain.

3Add next 8 ingredients. Cook covered full power 6 to 8 minutes until boiling. Stir 1/2 way.

4Blend ricotta and cottage cheese (if using), 1/2 cup Parmesan, egg, and parsley in small bowl.

5Layer 1/2 of noodles in 2 quart dish. Spread 1/2 of cheese mixture, 1/2 mozzarella, and 1/2 meat sauce.

6Repeat layers.

7Cover loosely with saran wrap.

8Heat full power 13 to 16 minutes.

9Sprinkle top generously with Parmesan.

10NOTE: This freezes well. I usually double the recipe and freeze some.
