1/4 csour cream

3/4 csalsa, divided

2 Tbsptaco seasoning

1/4 cdiced onion

3/4 cshredded cheddar cheese, divided

1 lbground beef

1/2 - 1 ccrushed Doritos, flavor of your choice
- OPTIONAL GARNISH

How To Make mexican taco meatloaf

1Preheat the oven to 350 degrees F. In a mixing bowl, whisk egg, 1/4 cup sour cream, 1/4 cup salsa, 2 Tbsp taco seasoning, 1/4 cup diced onions, and 1/4 cup shredded cheese.

2Add the ground beef and mix well.

3Add the crushed Doritos and gently incorporate.

4Place the meatloaf mixture in a baking dish and form a loaf.

5Bake at 350 degrees for 50 minutes.

6Remove from the oven and top with remaining 1/2 cup salsa and 1/2 cup cheese. Return to the oven for 10 - 15 minutes. Optional - serve with lettuce, tomatoes, onions, black olives, salsa, and sour cream if desired.
