Ingredients For mexican taco meatloaf

  • 1 lg
    egg
  • 1/4 c
    sour cream
  • 3/4 c
    salsa, divided
  • 2 Tbsp
    taco seasoning
  • 1/4 c
    diced onion
  • 3/4 c
    shredded cheddar cheese, divided
  • 1 lb
    ground beef
  • 1/2 - 1 c
    crushed Doritos, flavor of your choice
  • OPTIONAL GARNISH
  • lettuce
  • tomatoes
  • onions
  • black olives
  • salsa
  • sour cream

How To Make mexican taco meatloaf

    Preheat the oven to 350 degrees F. In a mixing bowl, whisk egg, 1/4 cup sour cream, 1/4 cup salsa, 2 Tbsp taco seasoning, 1/4 cup diced onions, and 1/4 cup shredded cheese.

    Add the ground beef and mix well.

    Add the crushed Doritos and gently incorporate.

    Place the meatloaf mixture in a baking dish and form a loaf.

    Bake at 350 degrees for 50 minutes.

    Remove from the oven and top with remaining 1/2 cup salsa and 1/2 cup cheese. Return to the oven for 10 - 15 minutes. Optional - serve with lettuce, tomatoes, onions, black olives, salsa, and sour cream if desired.
