Made this often when my kids were little and have shared it with friends and even the pickiest of eaters has always loved it. I hope anyone who tries it enjoys!

Ingredients For mexican skillet casserole

1 lbground meat

1 canranch style beans
-
1 canwhole kernel corn
-
1 canrotel tomatoes
-
1 1/2 cinstant rice (uncooked)

1 cwater
-
1 ccheddar cheese, shredded

1 pkgtaco seasoning mix
How To Make mexican skillet casserole

1In skillet brown ground beef with taco seasoning and drain fat.

2Pour instant rice in the skillet and stir to mix with the meat.

3Add the corn, beans, tomatoes, and water, stir and cover and let simmer on low heat for 10 minutes.

4Remove lid and cover with cheese replace lid and let stand for 5 minutes allowing cheese to melt.
