These delectable Mexican pizzas are double decker crispy fried corn tortilla pizzas stuffed with taco seasoned beef, refried beans, cheddar and Monterey Jack Cheese. They are then topped with more cheese, green onions, black olives, tomatoes and jalapenos. These pizzas are fun for weekend dinners with extended family and friends yet easy enough for weeknights.

Ingredients For mexican pizza

12corn tortillas

canola or vegetable oil
-
1 lbground beef

1/2 mdonion finely chopped

3 Tbsptaco seasoning

3/4 cwater

1 canrefried beans

3/4 cfinely shredded cheddar cheese

3/4 cfinely shredded monterey jack cheese

6grape tomatoes

1 smjalapeno sliced

1/3 csliced black olives

1green onion chopped
How To Make mexican pizza

1In a Dutch Oven or heavy skillet heat 1/2 inch oil to 350-375 degrees. Add one tortilla at a time and fry until crispy (about 1 minute) flipping halfway through the frying process. Remove to paper towels to drain.

2Meanwhile in a large skillet brown ground beef; breaking it up as it browns. Halfway through the browning process add the chopped onion. Once the ground beef is full browned and onions have softened add the taco seasoning and water. Simmer 10 minutes.

3Spread refried beans over 6 corn tortillas. Equally divide seasoned ground beef over the beans. Top with half of each cheese. Top each with another crispy corn tortilla and place on parchment paper covered baking sheets. Top each pizza with remaining cheese, sliced tomatoes, jalapeno, black olives and green onions.

4Bake at 400 degrees for 7-10 minutes or until cheese is melted.
