10uncooked lasagna noodles

2 cfavorite salsa

1 lbground beef

1 pkgtaco seasoning

1 smred onion diced

1 cfresh mushrooms sliced

2 csmall curd cottage cheese

1/2 cfresh parmesan cheese grated

2 Tbspfresh parsley chopped

115.5 ounce jar salsa con queso sauce

2 cshredded mexican cheese blend
How To Make mexican lasagna rollups

1Fill a large pot with water and salt and bring to a boil. Cook the noodles for about 10 minutes. Drain and lay flat on parchment paper.

2Mix the cottage cheese, Parmesan cheese and parsley together and set aside.

3Add a little oil to a large skillet and add the red onion and mushrooms and cook about 5 minutes. Add the ground beef breaking it up and cook until no longer pink. Stir in the taco seasoning.

4Preheat oven 350 degrees. In a large baking dish pour int the salsa. Spread some cottage cheese mixture on each lasagna noodle. Top with some meat mixture. Roll up and place in the pan on top of the salsa.

5Top each lasagna roll with the salsa con queso sauce. Sprinkle the cheese over the whole thing and top the pan with foil.

6Bake for 40 minutes. Remove from oven and remove the foil. Let sit 10 minutes then serve.
