An easy cornbread casserole with a Mexican flair that's budget-friendly. Cornbread, ground beef, corn, and cheese are layered to make this easy dinner. The ground beef has a lot of taco flavor and a little punch of heat from the green chiles. The corn and cheese help to mellow the spice. Sweet cornbread brings all the flavors together. This casserole is the perfect size for a family. But if you have several hearty eaters, you might want to double the recipe.

Ingredients For mexican cornbread casserole

  • 2 box
    cornbread mix plus preparation ingredients per package (8.5 oz each)
  • 1 lb
    ground beef
  • 1 can
    chopped green chiles (4.5 oz)
  • 1 pkg
    taco seasoning mix
  • water, per taco seasoning mix instructions
  • 1 can
    regular corn (15.25 oz)
  • 1 can
    creamed corn (15.25 oz)
  • 1 1/2 c
    cheddar cheese, shredded

How To Make mexican cornbread casserole

  • Taco seasoning, water, and green chiles added to ground beef.

    Brown ground beef. Add taco seasoning and water per package directions. Add green chiles and set aside.
  • Corn added to cornbread batter and poured into a baking dish.

    Mix cornbread per package directions. To cornbread, add 1/2 can of creamed corn and 1/2 can of regular corn. Add 1/2 of the cornbread mixture to a 9x13 pan.
  • Ground beef, corn, and shredded cheese added to baking dish.

    On top of the cornbread mixture, put the meat mixture. Then add the remaining cans of regular corn and cream corn over that. Add 1/2 of the cheese.
  • Remaining cornbread batter and cheese added to the baking dish.

    Top the remaining cornbread mixture and cheese all over the top.
  • Baking the Mexican Corn Casserole.

    Bake at 350 F for 35-40 minutes. Let set for 5 minutes. Cut into squares. Serve with sour cream, lettuce, guacamole, tomatoes, or whatever you like.
