I have been making this casserole several years. My friend and I were in PTA when her son and my daughter were in middle school, she served this casserole for Teachers Appreciation Day, it was a big hit.

Ingredients For mexican casserole

  • 1 1/2 lb
    ground chuck
  • 1/2 c
    chopped onion
  • 1 can
    cream of chicken soup
  • 3/4 can
    milk
  • 1 can
    large, enchilada sauce
  • 1 can
    green chilies
  • nacho cheese chips
  • shredded cheese

How To Make mexican casserole

    Layer 9x13 Dish with Nacho Cheese Chips
  • 2
    Pour onions into skillet, add ground chuck and brown.
  • 3
    Mix cream of chicken soup, milk, enchilada sauce and green chilies. Heat with onions and ground chuck until well mixed.

    Pour over Nacho Cheese Chips.

    Add Shredded Cheese.

    Bake at 350 degrees until cheese is melted, approximately 20 to 25 minutes.

    Serve with Nacho Cheese Chips.
