My family loves tacos and fajita's. One day we decided to combine a little of both recipe ingredients and came up with this wonderful surprise. They're messy to eat and oh so good!

Ingredients For mega-big fajitas

  • 2 lb
    beef stir fry
  • 1 md
    yellow pepper - cored and sliced length wise. if you prefer another color, go right ahead
  • 1 lg
    white onion-sliced length wise
  • 1/2 pkg
    shredded mexican cheese
  • 1/2
    head of lettuce-shredded
  • 1
    clove of minced garlic
  • 1 pkg
    large flour tortillias
  • hot sauce, salt and pepper to taste
  • 3 md
    tomatoes - diced
  • 1
    avacado- sliced at the last minute
  • 1
    small can of sliced black olives

How To Make mega-big fajitas

    Gather ingredients.
  • 2
    Slice onions.
  • 3
    Slice yellow pepper.
  • 4
    Dice tomatoes and shredd lettuce.
  • 5
    Cook stir fry in a small amount of olive oil with garlic. Add onions and yellow pepper and cook until translusent.

    Warm tortillias in microwave.

    Place tortillia on plate and pile on all ingredients including cheese, hot sauce, black olives, sliced avacado and salt and pepper.

    Fold both sides and the bottom.

    Dig in and enjoy. Have alot of napkins on the table.
