meatloaf with a tomato beef sauce
My husband and I ate at this little Inn in California and asked what was in the meatloaf. I experimented on my own and came up with this recipe. I made up the sauce on my own and added it to the meatloaf.
Blue Ribbon Recipe
This is a basic meatloaf recipe just like mom used to make that's old-fashioned and full of flavor. There is plenty of filler to keep it together and lots of fresh veggies to add flavor. Ketchup in the ground beef mixture adds a touch of sweetness. You might think of it as just meatloaf, but this one has a great intense beefiness with that special sauce that will separate it from the pack. We love the caramelization the sauce on top gets once this meatloaf is baked. Serve with mashed potatoes and a canned veggie for a budget-friendly easy-to-make meal.
Ingredients For meatloaf with a tomato beef sauce
- MEATLOAF

2 lbchopped meat

4eggs

1 lgonion, finely chopped

2 Tbspchopped parsley

2 tspsalt

1/2 tsppepper

2/3 coatmeal

1 cItalian bread crumbs

1 cfinely shredded carrots

1 cfinely shredded celery

6 Tbspketchup
- SAUCE
-
1/3 cketchup
-
1 canbeef consomme soup (10.5 oz)

1/2 tspdried basil
-
1 Tbspcorn starch
-
several drops of Frank's red hot sauce or Tabasco hot sauce (optional)
How To Make meatloaf with a tomato beef sauce

1Mix all meatloaf ingredients together.

2Shape into loaf and bake at 350 degrees for 1 hour.

3For the sauce, mix ketchup and corn starch together. Then stir in the remaining ingredients. In a microwave-safe measuring cup, microwave for 3 minutes. Stir.

4Pour sauce over meatloaf after it has baked for 1 hour. Bake for another 1/2 hour.
