Ingredients For meatloaf muffins

1 tspolive oil

1 conion, finely chopped

1/2 cancarrots, finely chopped

1 tsporegano
-
2 clovegarlic, minced

1 ctomato sauce
-
1 1/2 lbground beef, lean
-
1 csaltine crackers, finely crushed(about 20)

2eggs

1/2 ctomato sauce
How To Make meatloaf muffins

1Heat olive oil in skillet over medium-high heat. Add onion, carrot, oregano and garlic. Saute 2 minutes. Cool.

2Combine onion mixture, 1 cup tomato sauce, ground beef, saltines and egg. Mix well.

3Spray 12 muffin cups with cooking spray. Spoon in meat mixture.

4Top each 'muffin' with 2 teaspoons tomato sauce.

5Bake at 350 degrees for 25-30 minutes.
