I grew up making this recipe after my mother taught it to me. I altered it according to Rachel Ray and put in muffin tins so we don't have to fight over the crunchy parts anymore!

2eggs

1 mdonion, diced

4 Tbspketchup

1/2 coatmeal, uncooked

1 tspgarlic powder

1 tspsalt and pepper
How To Make meatloaf muffins

1Mix all ingredients in a bowl. This is easiest to mix with your hands. Roll into a ball about the size of the palm of your hand. Plop into muffin tins.

2Bake in a 350 degree oven for 45 minutes or until crispy around edges.
