I grew up making this recipe after my mother taught it to me. I altered it according to Rachel Ray and put in muffin tins so we don't have to fight over the crunchy parts anymore!

Ingredients For meatloaf muffins

  • 2 lb
    ground beef
  • 2
    eggs
  • 1 md
    onion, diced
  • 4 Tbsp
    ketchup
  • 1/2 c
    oatmeal, uncooked
  • 1 tsp
    garlic powder
  • 1 tsp
    salt and pepper

How To Make meatloaf muffins

  • 1
    Mix all ingredients in a bowl. This is easiest to mix with your hands. Roll into a ball about the size of the palm of your hand. Plop into muffin tins.

    Bake in a 350 degree oven for 45 minutes or until crispy around edges.
