These are so nice if you want your own personal meatloaf and so handy when company is coming over.

Blue Ribbon Recipe

This is not your traditional meatloaf, but it's fairly simple to make and quite tasty. It's an individual serving of meatloaf with a surprise stuffing in the middle. We used leftover cornbread stuffing, so this recipe would be a great way to use stuffing leftovers. Filled with flavor, the sauce is a delicious touch. Serve with mashed potatoes and a veggie, and you have a very comforting meal.

Ingredients For meatloaf roll-ups

  • 1 lb
    hamburger
  • 1 sm
    onion, chopped
  • 1/2 c
    cracker crumbs
  • 1 tsp
    salt
  • 1 dash
    pepper
  • 1 lg
    egg, beaten
  • 1 can
    cream of mushroom soup (10.5 oz)
  • 3/4 can
    water
  • 1 tsp
    soy sauce
  • 1/4 c
    ketchup
  • 1 c
    your favorite stuffing (prepared)

How To Make meatloaf roll-ups

  • Hamburger, onion, cracker crumbs, salt, pepper, and egg in a bowl.

    Mix together hamburger, onion, cracker crumbs, salt, pepper, and beaten egg.
  • Meat mixture formed into balls.

    Make into 4-6 patties.
  • Meat ball flattened and stuffing placed in the center.

    Add about a spoonful of stuffing. Roll up and tuck in sides. Place in a shallow baking dish.
  • Mushroom soup, water, soy sauce, and ketchup in a bowl.

    Mix together 1 can of mushroom soup diluted with 3/4 can of water, 1 tsp soy sauce & ketchup.
  • Sauce poured over the meat in a baking dish.

    Pour soup mixture over the meatloaf.
  • Meatloaf Roll-Ups baking in the oven.

    Bake in a shallow pan for 40 minutes at 350.
  • Meatloaf Roll-Ups on a plate with mashed potatoes and corn.

    Serve with mashed potatoes, noodles or rice, and a nice side salad. So Yummy!
