These are so nice if you want your own personal meatloaf and so handy when company is coming over.
Blue Ribbon Recipe
This is not your traditional meatloaf, but it's fairly simple to make and quite tasty. It's an individual serving of meatloaf with a surprise stuffing in the middle. We used leftover cornbread stuffing, so this recipe would be a great way to use stuffing leftovers. Filled with flavor, the sauce is a delicious touch. Serve with mashed potatoes and a veggie, and you have a very comforting meal.

Ingredients For meatloaf roll-ups

1 lbhamburger

1 smonion, chopped
-
1/2 ccracker crumbs

1 tspsalt
-
1 dashpepper
-
1 lgegg, beaten
-
1 cancream of mushroom soup (10.5 oz)

3/4 canwater
-
1 tspsoy sauce
-
1/4 cketchup
-
1 cyour favorite stuffing (prepared)
How To Make meatloaf roll-ups

1Mix together hamburger, onion, cracker crumbs, salt, pepper, and beaten egg.

2Make into 4-6 patties.

3Add about a spoonful of stuffing. Roll up and tuck in sides. Place in a shallow baking dish.

4Mix together 1 can of mushroom soup diluted with 3/4 can of water, 1 tsp soy sauce & ketchup.

5Pour soup mixture over the meatloaf.

6Bake in a shallow pan for 40 minutes at 350.

7Serve with mashed potatoes, noodles or rice, and a nice side salad. So Yummy!
