2eggs

1/2 cblack bean salsa or regular bottled salsa

1 ccorn chips, finely crushed

1 1/4 lblean ground beef

1/4 cblack bean salsa, bottled salsa or tomato sauce

1/3 ccorn chips, coarsely chopped

dairy sour cream
-
sliced green onions

shredded cheddar cheese
How To Make meat loaf ole'

1Preheat oven to 350 degrees F.

2In a large bowl, beat the eggs and add 1/2 cup salsa and the finely crushed corn chips. Add ground beef; mix well. Pat mixture into a loaf pan.

3Bake meatloaf in a preheated oven for 55-60 minutes or until 160 degrees. Drain fat and cool for approx. 10 minutes.

4Transfer meatloaf to a platter. Spread the remaining 1/4 cup salsa over meat loaf and top with cheddar cheese if desired. Sprinkle top with coarsely chopped corn chips and serve with sour cream, if desired.
