max's homemade enchiladas

This recipe came from my brother- in-law over 30 years ago. They are so easy to make that I even taught my husband how to make them. We used to make them together. Since he has retired he now flys solo and gets rave reviews! Note: I like to use one can of Wolf and one can of Hormel Chili.

Ingredients For max's homemade enchiladas

12-14 smcorn tortillas

1 1/2 ccooking oil

1 1/2 lbground beef
-
2 can19 oz wolf brand chili (no beans) or (1) hormel (1) wolf

1 pkg8 oz cheddar cheese

dashsalt and pepper to taste
How To Make max's homemade enchiladas

1Dip tortillas in heated oil.(just long enough to soften) Avoid getting the oil too hot or you will not be able to roll the tortillas. Place on paper towels.

2Brown ground beef in skillet. Add salt and pepper to taste. Drain and set aside in small bowl.

3Heat chili in saucepan. Pour just enough heated chili into a 9x13 baking dish covering the bottom.

4Fill each tortilla with ground beef and shredded cheese. (About a tablespoon) Roll up and place in baking dish. Pour remaining chili over tortillas.

5Bake covered with foil for 40-45 minutes at 350 degrees. Remove from oven and top with remaining cheese.

6NOTE: You can add chopped onions if desired before baking.
