This recipe was given to me by a wonderful Friend. I added a few embellishments, but she deserves all the credit.

Ingredients For marcia's baked spinach manicotti

12crepes or you can use manicotti shells

1/2 stickbutter
-
1/2 conion, minced
-
1 clovegarlic, pressed or minced

1 lblean ground beef
-
1 pkg10 oz. pkg. frozen chopped spinach, thawed and drained well

1/2 cricotta cheese
-
2eggs, lightly beaten
-
1 tspsalt
- SAUCE
-
1/4 cbutter
-
1 1/2 tspchicken bouillon or chicken stock base
-
1/4 call purpose flour
-
1 1/2 cmilk
-
1/4 cparsley, chopped fine
-
1 jar15-oz. jar spaghetti sauce with mushrooms
-
2 tspfinely chopped basil leaves
-
parmesan cheese for topping
How To Make marcia's baked spinach manicotti

1Prepare manicotti shells according to package instructions or use a basic crepe mix to prepare crepes.

2Melt butter in a skillet and add onion and garlic - cooking until onion is transparent. Add ground beef and cook through. Remove pan from heat.

3In a bowl, combine thoroughly drained spinach, ricotta cheese, eggs and salt. Combine with drained ground beef and mix well. Fill each manicotti shell or crepe with approx. 1/4 cup filling. Place them in a 3 qt. prepared baking dish.

4To prepare sauce - melt butter and blend in flour and chicken stock base. Remove from heat and stir in milk and return to stove top - bring to a boil - stirring constantly - approx. 1 minute. Add parsley. Pour mixture over manicotti.

5Combine spaghetti sauce and basil. Pour over sauce. Sprinkle with parmesan cheese on top and bake at 350 degrees for 30 minutes.
