magnificent meatloaf
(1 rating)
I have two male roommates that live with me. They always ask for me to cook them up a casserole or something that will last them the week. This time round they requested meatloaf. I was up for the challenge. Of course, I wanted to make it as tasty and slightly un-traditional. I put this recipe together based off what I had in my kitchen that sounded good. It was so good that even those who claim to not like meatloaf want more of this one.

How To Make magnificent meatloaf
-
1Preheat oven to 350 degrees. Place meat in a large bowl, set aside.
-
2Using a blender or food processor, finely chop the zucchini, carrot and apple. Add to meat.
-
3Also add to the meat the celery, onion, bread crumbs, egg, worcestershire sauce, garlic, parsley, basil, garam masala, and a 1/2 cup of the tomato sauce. Blend well....don't be afraid to get you hands in there and mix it up thoroughly.
-
4Transfer meat to a 9x12 casserole dish and form a large rectangle, leaving approximately 1-2 inches around all sides.
-
5Bake for 45 minutes. Remove from oven, and top with remaining sauce and cheese. Bake for 10 minutes more. Remove from oven and let sit for 10-15 minutes before serving. Tip: If too juicy, I like to remove the extra juices using a spoon or suction.
