From Luchow's in NYC. Make your own brown gravy or use a dry mix or canned. Good with butter noodles, fried potatoes or rice (my favorite).

Ingredients For luchow's calf's liver in wine

  • 2 Tbsp
    butter
  • 1 md
    onion, finely diced
  • 1 lb
    thinly sliced calf's liver (about 8 slices)
  • flour
  • salt and pepper, to taste
  • 1/2 c
    chablis
  • 1/2 c
    brown gravy

How To Make luchow's calf's liver in wine

    In a skillet over medium heat, melt the butter and sauce onion until very soft.
  • 2
    Dredge liver in flour and saute for 1 1/2 minutes per side(longer will make it tough). Salt and pepper, to taste.

    Add wine and stir well. Add brown gravy and let sauce come to a boil. Serve at once.
