lockdown essentials: beggar’s steak pouches
I define this as a “lockdown” recipe; however, in reality I make these pouches all the time. This one was done with steak, but you could use chicken, pork, fish… whatever. It is a fun thing to put together for young and old, and the variations are endless. So, you ready… Let’s get into the kitchen.

Ingredients For lockdown essentials: beggar’s steak pouches
- PLAN/PURCHASE

6 - 8 ozbeef, chicken, pork, or seafood, chopped

1 ozyellow onion, thinly sliced

2 tsptamari sauce, or liquid aminos
-
1 ozshredded cheese, your choice
-
1 Tbspsweet butter, unsalted

salt, kosher variety, to taste

black or white pepper, freshly ground, to taste

1PREP/PREPARE

2Gather your ingredients (mise en place).

3Place a rack in the middle position and preheat the oven to 350f (175c).

4Chop up your chosen protein, I am using chuck steak.

5Add it to a bowl with the tamari sauce (liquid aminos), and onions.

6Let it rest, covered, in the fridge for about an hour, or so.

7Resting is optional, but it does help all the flavors to blend together.

8Place on a large piece of parchment paper, and sprinkle with a bit of salt and pepper.

9Add the cheese and butter.

10Draw up the sides, and twist into a beggar’s pouch.

11Place into the preheated oven for 45 – 50 minutes.

12While it was cooking, I toasted up some bread cubes, and that is what I served it over. But, you could just a easily serve it over rice, or a nice steaming plate of mash potatoes. Mmm mmm mmm.
