I got this recipe from a friend of mine. It's one of my favorites.

These little cheddar meatloaves are pure genius! Making individual loaves makes for easy serving and everyone can enjoy a personal mini meatloaf. Fresh onions add a nice flavor and there's just enough salt and bits of gooey cheese from shredded cheddar. On top is a sweet glaze to contrast the savory meatloaf. This is a quick and easy weeknight meal.

Ingredients For little cheddar meatloaves

  • 1 lg
    egg
  • 3/4 c
    milk
  • 1 lb
    lean ground beef
  • 1 c
    shredded cheddar cheese
  • 1/2 c
    quick-cooking oats
  • 1/2 c
    chopped onions
  • 1 tsp
    salt
  • 2/3 c
    ketchup
  • 1/2 c
    brown sugar or to taste
  • 1 1/2 tsp
    yellow mustard

Note that the glaze is quite sweet, so if you don't like things sweet cut back on the brown sugar in the glaze.
  • Egg, milk, beef, cheddar cheese, oats, onions, and salt in a bowl.

    Preheat oven to 350 degrees F. Mix egg and milk in a bowl. Add beef, cheddar cheese, oats, onions, and salt.
  • Form into 8 small loaves.
