This is a great alternative to fatty pork breakfast sausage. Even friends who are not trying to limit their fat intake love these yummy patties for breakfast. I love it because it is easy to make ahead, form into patties and freeze. Just thaw, cook, and serve ... and sit back and enjoy the compliments!

Ingredients For lean 'n tasty beef breakfast sausage

  • 1 lb
    lean ground round
  • 1/2 c
    beef broth
  • 1 tsp
    lemon zest, grated
  • 1 Tbsp
    lemon juice, fresh
  • 4 Tbsp
    dry breadcrumbs
  • 1/4 tsp
    fennel seeds, crushed
  • 1/4 tsp
    salt
  • 1/4 tsp
    ground ginger
  • 1/4 tsp
    rubbed sage
  • 1/4 tsp
    red pepper flakes

How To Make lean 'n tasty beef breakfast sausage

    In a large bowl, combine all ingredients. Mix Well. Cover and let rest 15 minutes.

    Shape meat mixture into 8 equal patties.

    Coat a large skillet with nonstick cooking spray. Cook patties, working in batches if necessary, over medium-high heat for 5-6 minutes on each side.

    Remove patties from skillet and drain on paper towels. Serve hot.
