Years ago I worked with a little Korean woman who made the best japchae. I loved it so much she would make it for me and bring it to work. It was awesome

Ingredients For korean glass noodles w beef & veggies (japchae)
- MARINADE

1 Tbspsoy sauce
-
2 tspshaoxing wine
-
2 clovegarlic minced
-
1 tsptoasted sesame oil
-
1/4 tspblack pepper
- BEEF
-
4 ozrib steak sliced thinly
- SAUCE
-
4 Tbspsoy sauce
-
1/4 cbrown sugar
-
2 Tbsphoney
-
1 Tbsptoasted sesame oil

4 clovegarlic minced
- NOODLES AND VEGGIES
-
1 cshiitake mushrooms stemmed and thinly sliced

1 cfresh spinach leaves packed tightly
-
1/2 tspsalt
-
1 clovegarlic minced
-
1 tsptoasted sesame oil

1 sprigonion diced
-
1 mdcarrot julienned
-
1/2red bell pepper sliced
-
8 ozcellophane noodles
-
1 lgegg separated
-
1 Tbspeach black sesame seeds and toasted sesame oil
How To Make korean glass noodles w beef & veggies (japchae)

1Mix the ingredients together for marinade together. Mix in the rib steak and let marinate for 30 minutes.

2In a separate bowl mix the sauce ingredients together and set aside.

3Take 1 tbsp of sauce and mix it with the mushroom and set aside.

4Blanch the spinach in boiling water for 8 seconds. Drain. Rinse in cold water. Season it with salt, garlic, and sesame oil. Set aside.

5Cook the noodles according to package directions. Drain. Rinse in cold water. Toss the noodles in the sauce mix.

6Add 2 tbsp oil to large skillet or wok. Add the egg white and cook until done. Remove to cutting board. Do the same with the egg yolk. Slice into strips.

7Add more oil to pan and saute the onion and cook until translucent. Add the red bell pepper and carrots. Cook 2 minutes. Add the mushrooms and cook 4 minutes. Add the beef and cook 1 minutes. Stir in the noodles and spinach. Cook 2 minutes. Add the black sesame seeds and sesame oil. Garnish with the egg sliced
